Country Biscuits and Gravy

Serves 4

2 Biscuits and 1/3 Cup Gravy Per Serving

 

Renal and Renal Diabetic Exchanges:

1 Meat, 2 Starch, 1 Non-Dairy Milk Substitute,

4 Fat

 

Ingredients

Biscuits:

  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons margarine
  • 1/3 cup liquid non-dairy creamer
  • 1/3 cup water

Gravy:

  • 6 oz ground beef
  • ½ teaspoon sage
  • ½ teaspoon pepper
  • ½ teaspoon basil
  • ½ teaspoon garlic powder
  • 2 tablespoons margarine
  • 2 tablespoons cornstarch
  • 1 cup liquid non-dairy creamer

Directions

  1. For biscuits, combine flour and baking powder in a bowl.
  2. Cut in margarine until mixture resembles coarse meal.
  3. Add creamer and water, mixing to form a dough.
  4. Knead on a floured surface 10 times.
  5. Roll dough out and cut into 8 biscuits.
  6. Bake on a greased baking sheet at 450 F for 10-12 minutes until golden

For gravy:

  1. Mix ground beef with spices in a bowl.
  2. Brown beef in a skillet over medium heat.
  3. Drain, set aside.
  4. In the same skillet, melt margarine over low heat.
  5. In a small bowl, mix cornstarch with ¼ cup creamer until smooth.
  6. Add remaining creamer and stir until smooth.
  7. Add to margarine in skillet and cook over low heat, stirring constantly, until mixture thickens and bubbles.
  8. Add beef and heat thoroughly.

Serve over biscuits
